Yummy Recipe for Sarah

Finely grated zest of half a lemon
3 tbsp lemon juice
1/2 tsp salt
fresh ground pepper
1/3 cup olive oil
2 x 398 ml cans of chick peas
1 small red onion
1 small garlic clove
3/4 cup crumbled feta
1/4 cup parsley
20 leaves of mint
